Waterford's Speciality Roasters

Kephir Coffee Roasters is a single origin speciality coffee roastery with a focus on sourcing exclusive green coffee beans from carefully selected regions. What started as a road trip while living in the coffee producing state of Minas Gerais in Brazil soon became a mission to uncover small family run farms in the lesser known regions who passionately produce consistently high quality coffee with great care and attention to detail to both crop and their environment.

The producers I work with and have been fortunate to become friends with over the last number of years are strong proponents of Agroforestry – or “agrofloresta” as it’s known in Brazil. Agroforestry offers a myriad of tangible and intangible benefits for the environment, and most agroforestry systems provide a natural habitat for a wide range of flora and fauna, helping to protect and increase local biodiversity. It also helps to improve the physical and chemical properties of soil by making it nutrient-rich and fertile. It lowers soil and air temperatures, helping to provide a buffer against extreme temperature fluctuations. With climate change bringing unexpected excessive rainfall and heavy winds, agroforestry helps to prevent soil erosion and decreases the need for fertiliser use. This is an ancient practice with evidence of the use of agroforestry systems 4,500 years ago in the Eastern Amazon.

I am humbled to bring these coffees to Irish coffee lovers, and while Brazil was the starting point, the journey continues in Bolivia, Costa Rica, Honduras, Zambia, and Yemen, selecting and roasting some of the finest coffees from each of these regions.
